Taking the local Sandringham Estate for inspiration, we wanted to make a garden-themed version of a classic drink, so came up with our version of a gimlet with extra herbal flavours.

The Boadicea Gin - Classic works really well with elderflower, so it’s the perfect gin to use in this light and fragrant breakfast Martini.

Every gin needs its definitive take on the dry martini, so for this we just wanted to make one that had a clear identity. The gin to vermouth ratio is on the dryer and punchier end of the spectrum, and the drops of orange bitters work to draw out Boadicea’s citrus notes. Garnishing with a sprig of thyme allows the fragrance to play in the gin’s herbal notes and also stands on for the Iceni-related botanical, the nettle.
