A great classic cocktail given a ‘Rosa’ twist flavour-wise but otherwise retaining that great sweet-and-sour balance, silky mouthfeel and striking foam top.
60ml Boadicea® Rosa Gin
25ml Single Cream
15ml Lemon Juice
15ml Lime Juice
15ml Vanilla Syrup
10ml Grenadine
Egg White
Soda Water
Shake the first seven ingredients first without ice and then with ice.
Then strain two-thirds of the mix into a highball glass at the same time as pouring in the soda water.
Leave to settle for a minute and then pour in the rest of the mix.
The foam should be thick and rise out of the glass like a soufflé.
Garnish with raspberries.
